It is a beautiful story.
In 2009, while exploring the principles of permaculture and biodynamic agriculture, Chef Mauro Colagreco began to see the Mirazur gardens through a new lens. It was then that he discovered heirloom seeds and forgotten heritage varieties. Among them, one fruit captivated him immediately: the tomato. Its vibrant colours, remarkable shapes and extraordinary diversity of flavours tell the story of a living heritage once thought lost.
Year after year, this passion has taken root. Today, nearly 80 varieties are cultivated across our gardens in Menton and Castillon, on the doorstep of the Mercantour National Park. There, between sea and mountains, two distinct terroirs complement one another: one bathed in the gentle Mediterranean climate, the other shaped by cooler temperatures and greater humidity, allowing each variety to express its own unique character.
From August 18 Ode to the Tomato returns to Mirazur, telling this story through a singular gastronomic experience conceived as a celebration of cultivated biodiversity. Each dish showcases the richness of these exceptional tomatoes, paired with the finest meats, fish and seafood from our region.
An invitation to experience summer in its purest expression, guided by the rhythm of our garden harvests and the sun-drenched flavours of the French Riviera.
