Mauro Colagreco has found his own style in the interpretation of products and the contrast of flavors. Free from his Italian-Argentine cultural heritage and that of the chefs he trained with, he draws on his intuition from the local culture on both sides of the border.
Inspired by the sea, the mountains and the fruits and vegetables grown in his own gardens, Mauro invents refined, pictorial and colorful dishes that play on textures and bold combinations.
His fresh cuisine with a strong vegetal imprint highlights the magnificent ingredients of local producers: citrus fruits from the Riviera, saffron from Sospel, olive oil and lemons from Menton, wild mushrooms from the hinterland, fruits and vegetables from the markets of Ventimiglia, gamberoni from San Remo, fish from local fisheries...
