The story is beautiful.
In 2009, just as he was beginning to apply the principles of permaculture to his gardens, chef Mauro Colagreco discovered old-farm seeds and the concept of cultivated biodiversity. Faced with the incredible diversity of tomatoes he discovered, he devoted a large part of his garden to growing them.
Today, no fewer than 80 varieties are grown on our land between Menton and Castillon, a more rural area at the gateway to the Mercantour, with a cooler and wetter climate.

From 22 July, discover our exceptional menu celebrating the many different varieties grown in our gardens, and showcasing the meats, fish and seafood of our region.
